Directions:
Separate the egg whites from the yolks. Put the margarine, caster sugar, egg yolks, flour and the rind and juice of the lemon into a bowl. Mix well then add milk gradually.
Beat egg whites until stiff then fold into the mixture carefully. Pour into a two pint dish, then put the dish into a larger tin partly filled with water. The water level should be a little lower than the level of the mixture.
Cook in oven (190 C, 375 F, gas mark 5) for 45 mins. Take care not to over-cook. There should be a sponge on top and a runny lemon sauce underneath. |
